Oysters have held significant history within the black community post-slavery. It was a main source of income and played an instrumental part in oysters becoming a part of the luxury food scene, which was largely led by Thomas Downing. 

Thomas Downing ran an oyster house which offered the finest selection of oysters cooked in various forms to New York's elite.
